MOLTEN LAVA CAKE: THE SECRET REVEALED
A firm favorite at Curtain Bluff, our chocolate lava cake is an aria-inspiring marriage of sweetness and sin. Like many secrets of life, it turns out to be surprisingly simple.
INGREDIENTS (serves 6): equal parts (300g/10.5 oz) dark cooking chocolate, unsalted butter, caster sugar plus 6 eggs, 6 egg yolks and 2.25 oz flour.
PREP: grease 6 ovenproof ramekins and dust with flour. Melt the chocolate over a water bath then add the sugar and butter. Whisk in the eggs and the yolks, stir in the flour and pour into the ramekins (three-quarters full). Bake at 350F for 10-12 minutes.
